I have an '01 Tek with the manual adjustable seats.  They do not have the lumbar adjusting knob on the side, but there is a plastic cap over the knob location.  Is it possible to add lumbar adjustment to these seats by just adding the knob, or are there more parts required inside the seat?

Yes, unfortunately all of those parts are missing.  They just use that trim piece on on the end for both seat models to avoid having to produce two different parts (four if you count color combinations).  If you would want the lumbar control, your best bet would be to find another set of seats that has them and swapping them in (perhaps from a salvage yard or Ebay).
